omg bbq

omg bbq, originally uploaded by aznkey.

Hosted a bbq 2 weeks ago. First time using a grill at the park, turned out fairly well. A nice turn out of 10 people. The grill was small so it took a while to grill everything. I only have pictures of the kabobs.

Menu
Thai beef satay
Lamb kabob
veggie kabob
bbq chicken
potato salad

The chicken was a pain in the ass to grill and was catching on fire. But 40 minutes later it turned out awesome. The skin was nice and crispy and the meat was very tender and juicy. Hands down good eats.

So I lost a bet with my girlfriend so i owe her food. She likes strawberries and yogurt, soo here you go. Strawberry panna cotta with balsamic vinegar.

Recipe

taste like vanilla yogurt that is more firm, mild and sweet. The balsamic and strawberry gives it a nice kick.

Ribeye

ribeye, originally uploaded by aznkey.

Ribeye with shallots and bacon with cheesy potato wedges.

Made this to cheer up my roomate after the robbery.

1.5 lb ribeye about 1 inch thick
salt
pepper
1 medium size shallot sliced
3 thick slices of bacon lardons
1/2 tbs thyme
4 tbs sherry
4 tbs beef stock
olive oil
butter

Preheat oven to 400F. Season steak with salt and pepper and sear in a hot pan. About 3 mins per side. Finish in oven for another 8-10 min. So about 7 mins per side if i remember correctly, it was a nice medium. To the same pan add bacon and cook until brown and most of the fat is rendered out. Remain the bacon and dry the fat from the pan. If you have time clean the pan and add olive oil, if not just use the remaing oil in the pan and sweat the shallots. When the shallots are caramelized add bacon bits and deglaze with sherry. Then add beed stock and thyme and reduce for 5 mins. Finish the sauce with a pad of butter for extra richness and shine. Taste and season with more salt and pepper if desired. When the steak is done, let it rest for 15 mins before serving. Spoon sauce steak and enjoy.

Fish and latke

Fish and latke, originally uploaded by aznkey.

Been a while since the last update, don't worry i've been cooking.

Some orange roughy filets from costco pan sear with some soy sauce and sugar. Would have been better if i had some scallion and ginger too. To the side some potato latkes and a dollop of sour cream.

Braised fish

Fish
soy sauce
sugar
scallion
oil
Ginger
water
Sear whole fish or filet until golden brown and remove from pan. Add some more oil. Add scallion and ginger and cook for a bit to release the aroma. Add the rest and simmer for a min. Add fish, coat and serve.
