Chilled Corn Soup with Rock Shrimp & Avocado, Jalapeno Oil

I'm am seldom wowed by what I eat but this time I am truly impressed. Hands down the best corn soup i;ve ever had. The first thing that comes to mind when the first drop of soup hits your tongue is how light this soup is for something that appears to be cream based. The next sensation you experience would be your taste buds screaming CORN! It's amazing how a soup so light can pack so much flavor. It's like drinking the essence of corn. The key must be access to some impeccable corn combined with skilled roasting technique.
