So what do you do with the duck after you eat all the skin? Well you take the meat and you eat that. The next course was bean sprout with duck stir fry. This was awesome. By far the best utilization of the duck meat i've seen. Usually they just serve the meat on the side. Sweet and crunchy sprout plays quiet nicely with the savor duck.
