Summer Tomato Gazpacho with Cilantro Crema & Crab

This chilled tart soup refreshes your taste buds while teasing your appetite. At first i was expecting to taste salsa in a bowl but it was much better than that. The cilantro creme and crab meat played nicely off of the tomato helping to tone down the acidity. I couldn't tell that the creme with cilantro though. A beautiful appetizer that leaves you ready for the next course.
